New Recipe Category

baked-codI was thinking of adding recipe pages (a whole category) because people have been asking for quite sometime whether I have a cookbook or one I recommend and …

I don’t.

I have never seen an adequately safe cookbook for pancreatitis victims.

And recently some ladies have put the bug in my ear about starting a page of recipes.

If some of you ladies with creative cooking skills will do the actual recipes (write them down) send them to me via the comment section on this page I’ll set up your own usernames (when I post them you’ll be famous cuz everyone will know they are your recipes lol), add pics and post them after I check them out lol.

I’m a passable camp cook but for delectable table fare I am sorely lacking in skill. I don’t measure anything I just dump and sometimes my dog won’t even eat my stuff. But then she’s a picky eater lol

Let me know what you think of the idea and if you have learned the diet (my parameters) and want to help others have the ability to eat tasty food that is actually safe for them to consume simply tell me in the comment section. If you like you can even begin sending recipes that you have tested yourself, like and of course wouldn’t have a problem giving to others to enjoy. But wait …

Instead of sending recipes right away let’s see who is interested in particpating and how many recipes you might be able to contribute. I’ll need more than just two or three recipes because I would want to do a complete category that covers (fish, chicken, seafood, beans, lentils, veggie dishes, soups etc – you get the picture so what I’m saying is I don’t want to start and have no participants and no recipes 🙂 By the way …

If y’all don’t want to do this that’s ok too.

      Hi John, sounds marvellous, I would love to see your recipes. Sometimes I’m just bereft of ideas, plus feeling a bit nauseated doesn’t marry well with being a creative cook!

    I’m all for a recipe section, great idea.
    I live in New Zealand, so some of the ingredients would not be available here or may go by another name. For example, what Americans call jello, we call jelly, and what Americans call jelly we call jam. Funny really.
    No matter though, I would still get the gist. I have some Macrobiotic ideas I would share.

    That will be a great idea…I was the one who asked “the health guy” about recipes , I still at a limbo ,to me to buy groceries and eat out, is a torture really! I am eating fruits, soups, salads, but it has to be more than that…now I am having panic attacks, when I go out to dine not knowing if what I am eating it will cause me pain, I am very careful in what I order , but still ,I want to cook at my house something that I really like it … hope the idea of recipes will come out in someway , it will be wonderful…..

    I found a few on a 1 to 3 gram fat meals page. I haven’t tried them yet but would share them if they end up being good. I’d like you to see them first. Right now, I’m not eating at all. Visit to the doctor yesterday revealed a lipase of 900, so I’m fasting right now. I just don’t know what else to do. I have some grapefruit juice and cranberry, and some organic veggie broth, but I’m even afraid to do that at the moment. I’m at a total loss…. Anyway, there were about 10 different recipes on there.

    Broccoli Potato soup

    1 medium onion, finely chopped
    1 lb broccoli, florets + (part of stalks) finely chopped
    1 lb potatoes, peeled and diced
    1 quart chicken or vegetable stock
    1/2 teaspoon grated nutmeg
    salt and pepper to taste

    1. Sweat the chopped onion over gentle heat
    2. Add broccoli stalks, florets, potatoes, stock, nutmeg and salt and pepper simmer gently until soft
    3. Puree (I use a stick blender in the pot).
    4. Check seasoning

    Pea Salad

    1 16 oz. pkg frozen petite peas (or 3 cups fresh) thawed
    1/2 med onion, chopped to size of peas
    2 eggs, hard cooked; discard yolks and dice whites
    4 oz fat free cheddar cheese, cubed to size of peas
    1 T dill relish or chopped dill pickle
    3 T fat free mayonnaise
    salt & pepper to taste

    Devilish eggs

    10 hard boiled eggs (discard yolks)
    1 cup mashed potatoes (don’t add anything during mashing process)
    4 tsp. fat free Miracle Whip
    2 tbs. finely diced onion
    1/2 med sized dill pickle (finely chopped)
    2 tsp. horseradish (optional)
    2 tsp. pickle juice
    salt & pepper to taste
    sprinkle with paprika

      oops…ok, sorry I sent that. I’ll just put all my findings in a folder and if you’d like look at let me know and I can send them…I’m finding a lot more stuff than I thought I would. Not sure if they are acceptable though, so you’d have to look at it… I’ll try and see if I can’t find at least 5 of each category….

          I’ve been working on a snack category and I have also gathered some salads and really nice looking salad dressings. Please look them over though because I can’t be 100 percent sure they are safe. Actually, these aren’t my recipes. I’ve been finding them on line (I have the site and authors of the them listed) but since I’m down with this stuff right now I have a lot of time to search, so I’ll keep gathering as many as I can. I don’t need credit at all, I’m just tickled to help. However you want to do it is ok with me.

            Anna – as you know the new forum is up and works. I have moved the “recipe thing” into the forum. It’s all set up all people have to do is post their SAFE recipes. Hey how are you feeling I saw another comment that disappear when I approved it that said you were ill. Your lipase is up. That was awhile ago I have about 15 comments that somehow got “buried” by wordpress.

            Well, it’s unsure as of yet. I went to my clinic two weeks ago because I was still having a bit of trouble with pain. The nurse practitioner there explained to me that she was concerned because I had only had an acute attack and that I should be healed at this point. I asked, ” fried chicken and cold beer healed?” and she said “absolutely,” and so she set me up with some gastroenterologists in the nearest city, and took some blood. The next day her nurse called and told me my lipase was up. I went to see the specialists and they did an MRI and some more blood tests last Wednesday, but no word yet. I called today and I’m waiting on my next instructions, all the while feeling a little unsure about the competence in either clinic….there’s more to the story but I won’t bore you with it. Suffice it to say, I don’t feel that I’m being fully listened to or understood here, and I’m not sure if it’s incompetence, a lack of knowledge or just poor communication skills…Hopefully, I will know more this week. Thank you for asking. 🙂

            Well heck Anna – sorry to hear you are still feeling like &%$@. The Gastro office is sure taking thier sweet time. Did the nurse say how high your lipase was? Hopefully you’ll hear something good today. IF not and you are still ill tomorrow you might want check into the ER and see what happens there. Keep your chin up. 🙂

            It’s all been so crazy. I have been fighting this since around February when the pain became bad (actually 2 years ago when I first started feeling the twinges) . They couldn’t seem to find anything, even after an x ray, cat scan, and a lot of blood tests. Finally, in april, while waiting to see a gyno they had set me up with, I had a pain episode so severe I had to go to the emergency room. The on call doctor did another cat and blood work and was livid! He came in to talk to me and told me that I was very ill and he was sending me straight to the hospital in the next town. He told me I had pancreatitis and that my body was eating itself. The Emergency room here is a part of the clinic I go to, so he was able to pull up my records and see all that had been going on for the past few months. He wouldn’t even let me go to the parking lot to get my bag. He started an iv and hooked me up to a heart monitor, and then sent me via ambulance to the hospital. My lipase was 1200 at that time I believe. I stayed 5 days npo, they did another cat and an egd where they discovered many ulcers.The last day they let me have breakfast….(biscuits and gravy). Then I found you. I learned that I was not eating right and started right away with low fat non dairy. Probably saved me.. (I was drinking a glass of butter milk a day, and I was eating grilled cheeses with my cream of chicken soups…*eye roll!).

            This time, my lipase was 900. I asked them if I needed to be in the hospital, but they didn’t think I needed to be. I took things into my own hands and started fasting right away….it’s a bit hard for me because I’m pre diabetic as well so I have to be careful, but a friend of mine helped me to keep an eye on my blood sugar and in low times I would have a cup of veggie broth. So, now here I am. Still no news and it’s almost 6 pm so I’m thinking maybe tomorrow. Anyway, your suggestion about the ER is probably spot on. I had to do that the last time to get anything done, and it looks like I’ll have to do it again. Sometimes, you are your own best advocate…and so it goes.

            Hey Anna that IS crazy. Normal lipase is 0-50 U/L. If you are at 900 or were they should have dumped you into the ER. Not that lipase levels indicate severity of disease because they do not but 900 U/L definitely indicates acute pancreatitis. If you aren’t feeling any better you should get to the ER. It is better to be seen as a hypochondriac than on a slab in the morgue. And since you have records of 1200 U/L and now 900 I doubt a doc could be stupid enough to label you as a nut case.

    Health Guy… YOU ROCK!!
    Thank you for doing this! As soon as I figure out more recipes, I’m in. I’ve only got the turkey/spinach burgers and stuffed jalapenos at the moment. When I do more, I’m in too but I’m just a beginner, learning from the others. 🙂

      Hey Stacey – I have done something that I think will be more beneficial. I set up a forum(s). In that area of this site there are now forums for specific threads. One whole forum is for recipes. You can now register (validate your registration by email) and then login, set up your own profile, choose the recipe forum, create topics (chicken recipes, soups, etc) and post your recipes. You can add pics and video to your posts. Once the “forum” catches on with folks it should be busy.
